Depending on your preferred foods, you may have to try sneaking greens and veggies into your diet. We get it- we love all the carbs- but know that greens and fresh vegetables are essential for nutrition.
So whether you’re a single gal, a mom, or just a woman trying to be her healthiest self, here are a few easy ways to add extra greens into your weekly food prep.
1. Garden Veggie Pasta Sauce.
This method is great for disguising spinach, kale, and green bell peppers in a sauce, especially if you have a blender (an immersion blender is easiest).
Step 1: Make your favorite pasta sauce carrots, onions, garlic, and beef or veggie protein. Be sure to add your green or colorful bell peppers at this stage so they cook down all the way.
Step 2: Spice it up and let the tomatoes cook. *Tip: buying plain tomato sauce is healthier and just as easy as a pre-made jar.
Step 3: Once the sauce is ready, add in several handfuls of spinach or kale and let simmer in the sauce for 5 minutes or however long you feel until the greens have cooked.
Step 4: Blend it up into a delicious, creamy pasta sauce and serve over pasta of your choice! Go with chickpea pasta for a GF and low-carb option, or indulge in your favorite rotini.
2. Prepare your greens in advance.
This hack has saved me so much money and helps me eat all of the greens I buy without them wilting in the back of the refrigerator.
Once you get home from the grocery store, take all of your greens out of their packaging. If you like to eat kale, this is a great time to pull out the big stems that are too dense to eat. Don’t let the greens sit in sealed plastic any longer than necessary
Wash and chop them. I prefer a plant-based cleaner to make sure my greens are totally clean. Store greens in the refrigerator using a glass container with a damp paper towel. *Tip: At this stage, you can prepare kale in olive oil, salt, and lemon juice if you like to eat it raw.
Now, all of your greens are clean, chopped, and waiting for you in a glass container. It’s so easy to grab a handful of spinach or lettuce to make a quick salad with each meal. Sometimes, I even have a simple oil and vinegar spinach salad with my fried eggs in the morning.
